Crustless Tart with Tomatoes & Goat Cheese

Goat cheese (Chevre) is somewhat like Feta cheese (made from sheep's milk). It is intensely flavorful and very popular. Here it is paired with tomatoes, onions and herbs for a delicious tart that serves well for lunch or brunch.

1 can (1 pound) stewed tomatoes, chopped. Do not drain.
1 onion, minced
2 shallots, minced
1 clove garlic, minced
1 tablespoon lemon juice
1 tablespoon chopped parsley leaves
1/2 teaspoon sweet basil flakes
pepper to taste

4 eggs, beaten
1/4 cup crumbled goat cheese (2 ounces)

 

In an uncovered saucepan, simmer together first group of ingredients for 20 minutes, or until onion is soft. If most of the juice has not evaporated, cook over high heat until very little liquid remains. Of course, watch carefully not to scorch. Allow to cool for about 5 minutes.

Stir in the beaten eggs and place mixture into a lightly oiled 9-inch quiche pan. Sprinkle top with cheese. Bake at 350-degrees for about 30 minutes, or until eggs are set. Serve with a vegetable salad. Serves 6.
