

4 eggs
1 cup low-fat milk
1/2 teaspoon oregano flakes
white pepper to taste1 jar (8 ounces) marinated artichoke hearts, rinsed, drained and cut into fourths
4 marinated red peppers, drained and cut into strips
1/2 cup chopped green onions
1 clove garlic, minced2 tablespoons grated Parmesan cheese
Beat together first group of ingredients in a large bowl. Stir in next 4 ingredients until blended. Pour mixture evenly into a lightly greased 10-inch quiche baker or 8x8-inch baking pan and sprinkle top with grated cheese. Bake at 350-degrees for 25 to 30 minutes, or until eggs are set and top is browned. Serves 4 for lunch.
