Spinach Frittata with Cheese & Onions

This simple little casserole will furnish you with a fine vegetable accompaniment to dinner. It is also a very satisfying snack, and you will feel virtuous nibbling on this marvelous combination of vegetables, cheese, egg, and whole wheat bread.

2 packages (l0 ounces, each) frozen chopped spinach, drained
l pint low-fat Ricotta cheese
3 tablespoons grated Parmesan cheese
1 egg, beaten
2 slices fresh whole wheat bread, crumbed (1 cup crumbs)
l/3 cup chopped green onions
l/2 teaspoon each, sweet basil flakes and oregano flakes
pepper to taste

l teaspoon oil

In a large bowl, stir together all the ingredients (except the oil) until mixture is nicely blended. Spread oil on the bottom of a 9xl3-inch baking pan and spread spinach mixture evenly in pan. Bake at 350-degrees for about 50 to 55 minutes, or until top is browned and casserole is set. If not serving at this time, allow to cool in pan. When cool, cut into squares. This is nice served warm. Will serve 6 for lunch or 12 as an accompaniment to dinner.
