Paella Valencia with Shellfish


This colorful, intensely delicious paella, made with very little oil and no sausage, ham or pork is just as delicious as the original. The yield is also generous and satisfying.

2 onions, chopped
3 cloves garlic, minced
1 teaspoon oil

1 can (4 ounces) diced green chiles
2 medium tomatoes, peeled, seeded and chopped

1 1/2 cups rice
2 cups chicken broth
1/4 teaspoon black pepper
1 teaspoon ground turmeric
1/4 teaspoon ground cumin

1 1/2 pounds cooked shellfish (shrimp, lobster, etc.)
1 package (10 ounces) baby peas, defrosted

In a Dutch oven casserole, saute onions and garlic in oil until onions are soft. Stir in chiles and tomatoes and heat through. Stir in the next 5 ingredients, cover pan and simmer mixture for about 30 minutes, or until rice is tender and liquid is absorbed. Fluff rice with a fork, stir in shrimp and peas and heat through. Serves 6.
