

This colorful, intensely delicious
paella, made with very little oil and no sausage, ham or pork
is just as delicious as the original. The yield is also generous
and satisfying.
2 onions, chopped
3 cloves garlic, minced
1 teaspoon oil
1 can (4 ounces) diced green chiles
2 medium tomatoes, peeled, seeded and chopped
1 1/2 cups rice
2 cups chicken broth
1/4 teaspoon black pepper
1 teaspoon ground turmeric
1/4 teaspoon ground cumin
1 1/2 pounds cooked shellfish (shrimp, lobster,
etc.)
1 package (10 ounces) baby peas, defrosted
In a Dutch oven casserole, saute onions and garlic in oil until onions are soft. Stir in chiles and tomatoes and heat through. Stir in the next 5 ingredients, cover pan and simmer mixture for about 30 minutes, or until rice is tender and liquid is absorbed. Fluff rice with a fork, stir in shrimp and peas and heat through. Serves 6.
