

1/4 cup chopped red bell peppers
1/4 cup chopped green bell peppers
1/4 cup finely minced onions
1 tomato, peeled, seeded and chopped
freshly ground black pepper to taste
1 teaspoon olive oil
4 eggs, beaten
3 ounces feta cheese, crumbled
1/4 teaspoon dried dill weed
In a covered saucepan, cook together first 6 ingredients until vegetables are soft. Spread mixture evenly in 9x2-inch round baking pan or deep-dish pie plate. Stir together the remaining ingredients, and pour evenly over the vegetables. Bake in a 350-degree oven for about 20 minutes or until eggs are set. Serve with Onion-Flavored Baby Baked Potatoes. Serves 4.

Onion-Flavored Baked Baby
Potatoes:
8 baby potatoes (about 1 pound), scrubbed. Peel off 1-inch of
skin
from around the center.
1 tablespoon melted butter
1/4 teaspoon onion powder, or to taste
In an 8-inch round baking dish, toss together
all the ingredients. Bake in a 350-degree oven for about 40 minutes,
or until potatoes are tender and the peeled band is golden brown.
