

1 cup non-fat cottage cheese
2 eggs
2 egg whites
1/3 cup whole wheat pastry flour
1 tablespoon sugar
1 tablespoon melted margarine
1 teaspoon baking powder
1/4 teaspoon vanilla
In a mixing bowl, mix all the ingredients with a fork until combined. Do not overmix. Spoon about 1/8 cup batter on a preheated non-stick griddle pan. When the bottom of the pancake is golden brown and top is bubbly, turn and brown other side. Serve with with Low-Calorie Sour Cream and Fresh Strawberry Sauce. Yields 12 pancakes.
