

Traditionally, Cappuccino is made with equal
amounts of espresso coffee and hot milk. Served with a dollop
of whipped cream and a sprinkling of cinnamon or nutmeg, it is
very good indeed. However, the addition of liqueurs and cream
adds a good deal of excitement and "spirit" to the occasion.
Mixes can be prepared in advance, leaving only the boiling of
the liquid at the last moment.
INSTANT CAPPUCCINO MIX
4 tablespoons instant espresso coffee
2 tablespoons cocoa
2 tablespoons sugar
Combine all the ingredients in a jar with a
tight-fitting lid and shake to blend.
LIQUEUR & BRANDY BLEND
5 ounces Kahlua coffee liqueur
5 ounces Créme de Cacao liqueur
2 ounces Cognac or brandy
Combine all the ingredients in a jar with a
tight-fitting lid and stir to blend.
LIQUID MIXTURE
4 1/2 cups water
1 1/2 cups milk
1 1/2 cups cream
Place all the ingredients in a saucepan and bring mixture to a boil.
To Serve: Place 1 teaspoon Cappuccino Mix into each cup. Add about 5 ounces hor milk mixture and 1 ounce liqueur blend to each cup. Stir. Top with a dollop of whipped cream. Sprinkle lightly with cinnamon or nutmeg or shaved chocolate. This recipe is planned to serve 12.
Note: -Cappuccino Mix can be stored for weeks
and is very nice to have
on hand. Use it as you would instant coffee.
-Liqueurs can be combined and stored indefinitely.
