
Cottage Cheese Pancakes with Strawberries & Sour Cream
1 cup non-fat cottage cheese
3 eggs
pinch of salt
2 tablespoons sugar
2 tablespoons melted butter
1/3 cup flour
1 teaspoon baking powder
1/2 teaspoon vanilla
In a mixing bowl, whisk together all the ingredients until blended. Batter will be thick. Do not overmix. Spread about 2 tablespoons batter on a buttered, preheated non-stick griddle and press gently to flatten. When bottom of pancake is golden brown and bubbly on top, turn and brown other side. Keep warm in a 200° oven. Serve with a dollup of sour cream and sliced fresh strawberries. Applesauce with a sprinkling of cinnamon is also nice. Yields 12 small pancakes and serves 4.
