
2 apples, peeled and grated and tossed
with 2 tablespoons
lemon juice
1/2 cup yellow raisins
1/2 cup chopped walnuts
1/4 cup sugar
1/4 teaspoon cinnamon
4 tablespoons butter
3 eggs
1 cup flour
1 cup milk
2 tablespoons melted butter
2 tablespoons sugar
1/2 teaspoon vanilla
In a 10-inch round baking pan (or skillet that can go into the oven), sauté together the first 6 ingredients, until apples are softened.
Meanwhile, beat together the remaining ingredients until nicely blended. Pour batter evenly over the apple mixture and bake in a 350° oven until puffed and golden, about 30 minutes.
Sprinkle top with cinnamon sugar, and dot with sour cream and lingonberry jam. Strawberry jam is excellent, too. Fresh lingonberries are very nice but not often available. Serves 4.
