
Beef Mixture:
1 pound sirloin steak, cut into 1/8-inch slices, then cut into
1-inch squares
2 teaspoons cornstarch
1 tablespoon soy sauce
1/4 cup beef broth
Vegetable Mixture:
2 cups broccoli florets
1/2 pound mushrooms, sliced
1 medium onion, coarsely chopped
4 cloves garlic, minced
Sauce:
3/4 cup beef broth
1 tablespoon soy sauce
1 tablespoon oyster sauce
1 tablespoon sesame oil
1/4 teaspoon pepper
1 tablespoon cornstarch
2 tablespoons peanut oil
2 tablespoons toasted sesame seeds
Mix together each group of ingredients in separate bowls. In a wok or skillet, heat oil until sizzling hot. Add the meat mixture and stir fry until meat loses its pinkness. Remove meat from pan and if necessary, heat a little more oil until sizzling hot. Add the vegetables and stir fry, over high heat, until vegetables are firm tender. Add the sauce ingredients and continue stir frying, over high heat, until sauce thickens. Toss in the meat mixture and toasted sesame seeds at the end, and heat through. Serve over steamed or fried rice. Serves 6.
To Toast Sesame Seeds:
Place 1/4 cup sesame seeds in a pie pan and heat in a 350°
oven for 6 to 8 minutes, or until just beginning to take on color.
Watch carefully, as there is only a minute between brown and
burnt. Store in a jar in the refrigerator and use as needed.
Notes for Advance Preparation:
-Beef can be cut 1 day earlier and stored in the refrigerator.
-Vegetable mixture can be cut 1 day earlier and stored in the
refrigerator.
-Sauce can be assembled earlier in the day (omitting the cornstarch)
and stored in the refrigerator. Stir in the cornstarch before
using.
