A Chinese Banquet
Chinese almond cookies are traditionally made with lard. These flaky Butter Almond Cookies are a delicious substitute.
1/2 cup butter (1 stick), melted and cooled
1 cup flour
1/4 cup sifted powdered sugar
1/4 cup almond meal (finely grated almonds.) Use a nut grater to finely grate or purchase almond meal in health food stores.
1 teaspoon almond extract
whole blanched almonds
In a bowl, stir together first 5 ingredients until mixture is blended. With floured hands, roll 1 heaping tablespoon of dough into a ball and flatten it slightly. Place on a greased cookie sheet and press an almond into the center. Bake at 350° for 13 to 15 minutes or until cookies are set and lightly browned. Yields about 16 cookies.
