A Chinese Banquet

 

Chinese Cucumber Salad

5 Chinese cucumbers, peeled and thinly sliced
1 clove garlic, minced
2 green onions, thinly sliced
1 small onion, peeled and thinly sliced
1 shallot, minced

1/2 cup seasoned rice vinegar

Combine all the ingredients in a bowl and refrigerate until serving time. Drain cucumbers when serving and add a few drops of additional rice vinegar. Serves 6.

Notes for Advance Preparation:
-Cucumber salad can be prepared earlier in the day and stored in the refrigerator.
