
This is not the traditional fried rice, but it is very good, indeed. It is a gorgeous array of colors and presents beautifully. Everybody loves it because it is light and very flavorful. This can be made in advance and heated at serving time.
To Make Rice:
1 1/2 cups rice
3 cups chicken broth
1 teaspoon sesame oil
1 tablespoon soy sauce
salt to taste
To Make Vegetables:
1 package (10 ounces) frozen corn, defrosted
1 package (10 ounces) frozen petit peas, defrosted
1 red pepper, seeded and cut into small dice
1 tablespoon peanut oil
In a covered saucepan, stir together first 5 ingredients and simmer mixture for 30 minutes or until rice is tender and liquid is absorbed. In a wok or skillet, sauté vegetables for 5 minutes or until tender. Add rice, stir and heat through. Serves 6 generously.
Notes for Advance Preparation:
-Entire dish can be prepared 1 day earlier and stored in the
refrigerator. Add a few drops of water when reheating.
