
Teriyaki marinade can be purchased at most supermarkets. If you have any trouble finding it, you can make it by stirring together 1/2 cup soy sauce and 2 tablespoons brown sugar.
2 pork tenderloins (about 1 1/2 pounds, each.) Sprinkle with pepper and garlic powder to taste.
Honey Apple Glaze:
1/4 cup apple jelly
1/4 cup honey
1/4 cup apple juice
1/4 cup teriyaki marinade
1 tablespoon lemon juice
1 teaspoon ground ginger
salt and pepper to taste
Place meat in a roasting pan and bake at 350° for 30 minutes. Meanwhile, heat glaze ingredients for 1 or 2 minutes, or until mixture is blended. Baste pork with Honey Apple Glaze and continue baking and basting for about 40 minutes, or until a meat thermometer registers 175°. To serve, cut into 1/2-inch medallions. Serves 6.
Notes for Advance Preparation:
-Pork could be prepared earlier in the day and stored in the
refrigerator. Brush with a little more glaze when reheating.
