
If you plan to serve this when apricots or peaches are not in season, then use frozen peaches as a good alternative. Frozen peaches are sold peeled and pitted.
8 scoops vanilla ice cream. These can
be shaped earlier
in the week, wrapped in double thicknesses of plastic
wrap, and stored in the freezer.
8 teaspoons chopped, toasted almonds
Apricot or Peach Puree:
1 pound peaches or apricots, peeled and pitted
1 tablespoon concentrated frozen orange juice
1 tablespoon lemon juice
1 tablespoon sugar
In a food processor, blend together all the ingredients until fruit is pureed. Place a little fruit puree on a plate, top with a scoop of ice cream and sprinkle with a few chopped toasted almonds.
