Renny Darling's Cinco de Mayo

 

Layered Mexican Dip with
Chiles & Cheddar

 

1 onion, chopped
2 cloves garlic, minced
1 tablespoon oil

1 pound lean ground beef or turkey
1 envelope prepared Taco Mix (about 1.25 ounces)
salt and pepper to taste

1 can ( 1 pound) refried beans
1 cup sharp Cheddar cheese, grated
1 can ( 4 ounces) diced green chiles

1 cup low-fat sour cream
2 tomatoes, peeled, seeded and chopped
1/2 cup chopped green onions

Sauté together first 3 ingredients until onion is transparent. Add the next 4 ingredients, and sauté until meat loses its pinkness. Drain beef and place in a 9x9-inch baking pan. Spread refried beans over the top and sprinkle cheese and chiles evenly over all. Bake at 350° for 15 to 20 minutes, or until heated through and cheese is melted. Stir together the remaining ingredients and spoon on top of casserole. Serve at once with tortilla chips for dipping. Delicious. Serves 8 as a hefty hors d'oeuvre.
