
1 package (6 ounces) dried apricots, chopped
1 cup orange juice
1/4 cup sugar
2 1/2 cups yellow cake mix (use the regular cake mix
not the pudding mix)
1/2 cup butter (1 stick)
1 cup chopped pecans
4 tablespoons cinnamon sugar
1 can(14 ounces) sweetened condensed milk
In a saucepan, cook together apricots,
orange juice and sugar until apricots are soft. Drain apricots.
In a 9x13-inch pan, melt the butter and spread it evenly. Sprinkle the cake mix evenly over the butter and pat it down with a fork. Sprinkle apricots, pecans and cinnamon sugar evenly over the cake mix. Drizzle the condensed milk evenly over all.
Bake in a 350° oven for about 30 minutes or until top is nicely browned. Allow to cool, and then cut into squares. Sprinkle top with a faint dusting of sifted powdered sugar. Yields 48 cookies.
Note: -Cookies freeze beautifully. Wrap
in double thicknesses of plastic wrap
and then, foil. Remove wrappers to defrost.
