
1 1/8 cups flour
1 1/2 cups sugar
1 teaspoon baking powder
3 eggs
1/2 cup oil
1/4 cup Bourbon
1/2 orange, grated (remove any large pieces
of membrane)
1 teaspoon vanilla
1 cup yellow raisins
1 cup chopped dates
1 cup chopped glaceed candied mixed fruits
1 1/2 cups chopped walnuts
In the large bowl of an electric mixer, place flour, sugar and baking powder. Add eggs, oil, Bourbon, orange and vanilla and beat until mixture is blended. Stir in the remaining fruits and nuts.
Spread batter evenly into a greased and floured 9x13-inch pan and bake in a 350° oven for about 30 minutes or until a cake tester, inserted in center, comes out clean.
Allow cookies to cool and spread with Bourbon Vanilla Icing. Cut into squares and serve with milk or cider. Yields 4 dozen 1 1/2-inch squares.
Bourbon Vanilla Icing:
4 tablespoons butter, softened
2 1/2 cups sifted powdered sugar
1 tablespoon Bourbon
1 tablespoon cream
1 teaspoon vanilla
Beat together all the ingredients until mixture is thoroughly blended. Add a little cream or additional sugar so that the icing is of spreading consistency.
