
3 eggs
2/3 cup oil
1 teaspoon vanilla
1 cup flour
1 cup sugar
1 teaspoon baking powder
pinch salt
1 cup chopped dates
1 cup yellow raisins
1 cup chopped walnuts
2 tablespoons cinnamon sugar
In a bowl, beat eggs, oil and vanilla until blended. Beat in flour, sugar, baking powder and salt until blended. (Do not overbeat.) Stir in dates, raisins and walnuts.
Pour batter in a greased 9x13-inch pan and bake in a 350° oven for 25 minutes or until top is lightly browned. Cut into squares while warm. Yields about 48 (1 1/2-inch) cookies.
