
What a delicious cookie to greet friends coming over for coffee, or to surprise the children trudging home from school. The crust is a delicate cookie, topped with coconuts and pecans and a drizzle of milk chocolate.
1/2 cup butter (1 stick)
1/4 cup sugar
1 egg
1 1/3 cups flour
pinch of salt
1/2 teaspoon vanilla
Beat together butter and sugar until nicely blended. Beat in egg. Beat in flour, salt and vanilla. Pat the mixture on the bottom of a greased 8x12-inch pan and bake in a 350° oven for 15 minutes. Pour Coconut Pecan Topping on the baked crust and continue baking for 25 minutes. Allow to cool slightly and drizzle melted chocolate over the top in a decorative fashion. Cut into squares and sprinkle with a little powdered sugar. Yields 24 cookies.
Coconut Pecan Topping:
2 eggs
1 cup sugar
2 tablespoons flour
1/2 teaspoon baking powder
1 1/2 cups chopped pecans
1/2 cup sweetened flaked coconut
Beat all the ingredients together until blended.

1/2 cup milk chocolate chips, melted
