
There is no cookie that you can make that is easier or more delicious than this spicy, fruity, nutty bar. It is exceedingly easy to prepare, starting, as it does, with a prepared cake mix.
1 package (18 1/2 ounces) spice cake mix
(not
the pudding variety, but the regular cake mix)
2 teaspoons pumpkin pie spice
1/4 cup butter, melted
2 eggs
1/3 cup sour cream
1/4 cup sugar
1/2 orange, grated (use the fruit, peel and juice)
1 cup chopped walnuts
Combine all the ingredients in the large bowl of an electric mixer and beat until mixture is blended, about 1 1/2 minutes. Spread mixture evenly into a greased 10x15-inch jelly roll pan and bake in a 350° oven for 25 minutes or until a cake tester, inserted in center, comes out clean. Remove from oven and allow to cool in pan.
When cool, spread Lemon Orange Glaze over the top and allow it to set for about 30 minutes. Cut into squares or bars and serve with a tall glass of milk. Yields 48 cookies.
Lemon Orange Glaze:
2 tablespoons lemon juice
2 tablespoons orange juice
2 tablespoons grated orange peel
1/2 cup finely chopped walnuts
1 tablespoon sour cream
2 cups sifted powdered sugar (about)
Combine all the ingredients and stir until blended. Glaze should be quite thick. Add a little extra powdered sugar if necessary.
