
This is a great bread in the French mood and so nice for dipping into soups or stews. Bread can be prepared a day earlier, carefully wrapped in double thicknesses of plastic wrap, and heated before serving.
3 cups self-rising flour
3 tablespoons sugar
1 can (12 ounces) beer, cold or at room temperature
1/2 cup chopped chives
1/2 cup grated Swiss cheese
1 teaspoon thyme flakes
4 teaspoons oil
1/4 cup grated Parmesan cheese
1 tablespoon sesame seeds
In the large bowl of an electric mixer, beat together first 3 ingredients until blended. Beat in the next 3 ingredients until blended, about 1 minute. Do not overbeat.
Place oil on the bottom of a 12-inch round baker and spread batter evenly in pan. Brush top with oil that collects on the sides. Sprinkle top with grated Parmesan and sesame seeds.
Bake at 350° for about 45 minutes or until top is golden brown. Allow to cool in pan. To serve, cut into wedges...or serve whole and allow guest to tear off a piece or two.
