

1 apple, peeled, cored and grated
2 tablespoons butter
2 tablespoons flour
1 tablespoon curry powder1 can (10-1/2 ounces) chicken broth
3/4 cup apple juice
salt to taste1-1/2 cups half and half
1 cup cooked chicken, cut into julienned strips1/2 cup cream, whipped
1/2 cup sweetened coconut flakes, toasted
Sauté apple in butter until apple is soft. Add flour and curry powder and cook for 1 minute, stirring now and again. Stir in chicken broth and apple juice and continue cooking and stirring until mixture is heated through. Add the salt, half and half and chicken and simmer for 5 minutes. Serve with a dollop of whipped cream and a sprinkling of toasted coconut flakes. Serve with Pita Bread with Butter, Sesame Seeds and Honey. Serves 4.
Pita Bread with Butter. Sesame Seeds & Honey
With a scissors trim about 1/8-inch off the edge of the pita bread. You will have two flat circles of bread. Cut each half in quarters, spread with sweet butter and honey. Sprinkle with a few sesame seeds. Broil for a few seconds only. Bread should not brown, but will be very crisp. Make at least 2 pitas for 4 people.
