Country French Vegetable Soup

3 carrots, thinly sliced
3 potatoes, cubed
3 cans (10-1/2 ounces each) chicken broth
1 cup water
salt and pepper to taste
1 can (8 ounces) tomato sauce
1/4 cup chopped parsley leaves

1/4 cup butter
3 shallots, finely chopped
3 onions, finely chopped
2 cloves garlic, put through a press
1 package (10 ounces) frozen peas

In a large saucepan or soup pot, cook together the first seven ingredients and simmer mixture for 45 minutes or until vegetables are tender. Do not cover the soup pot entirely, but leave the lid slightly ajar.

Meanwhile, sauté together the remaining ingredients until the onions are tender. Add this mixture to the soup pot and continue simmering for 15 minutes. Divide mixture between 6 or 8 oven-proof soup bowls. Float a slice of French Bread with Garlic Swiss on top and broil for a few seconds until top is lightly browned. Serves 6 to 8.

French Bread with Garlic Swiss Cheese

1 egg white
1 clove garlic, put through a press
1 cup grated Swiss cheese

6 slices French bread, lightly toasted

Combine egg white, garlic and cheese and stir until blended. Spread mixture on toasted French bread.
