Soup is the stuff poetry is made of. I can think of no other food that can stir up more fond memories and feelings of nostalgia than a bowl of glorious soup on a cold wintry night. Soup embraces with a certain sense of satisfaction that nurtures the spirit and gladdens the hearts of men.

Mama used to make soups that started early in the morning and cooked all day. They were very, very good, but if time is a problem for you (as it is for me), there are several very excellent alternatives you can use.

Accompaniments lend a great deal of joy to soups. The few I have included can be mixed and matched according to your taste. These are easy to make and fun to serve.

For me a pot of soup, simmering on the stove, fills a home with love and the feeling that all is well in the world.
