Chocolate Chip & Pecan Pie

Children love this pie...children of all ages, that is. This is a homey pie, easy to prepare and great for family dinners. It can look exciting if the top is decorated with rosettes or swirls of frosting. Sprinkle top with a faint spray of finely chopped chocolate. Vanilla wafers can be made into crumbs in a food processor. Chocolate chips can be finely chopped in a food processor.

3 eggs
1/2 cup sugar

2 cups vanilla wafer crumbs
1/2 cup sugar
1 teaspoon baking powder
1 teaspoon vanilla
1 cup coarsely chopped pecans
1 cup semi-sweet chocolate chips

Beat eggs with sugar until light and fluffy, about 5 minutes. Fold in the remaining ingredients until blended. Pour batter into a buttered 9-inch pie plate and bake at 350° for 30 minutes. Frost with rosettes of Chocolate Chip Cream and sprinkle top with a teaspoon of finely chopped chocolate. Refrigerate overnight. Serves 8.

Chocolate Chip Cream:
3/4 cup cream
1 tablespoon sugar
3 tablespoons finely chopped chocolate chips

Beat cream with sugar until stiff. Beat in chocolate chips.
