Honey Baked Ham
with Glazed Cinnamon Apple Rings

This is a traditional recipe for baked ham, sparkled with brown sugar, mustard and cloves. The apple rings are a nice accompaniment.

1 ready-to-eat ham, about 12 pounds, with bone in. With a sharp knife, remove the skin and fat, leaving a thin layer of fat to keep meat moist while baking. Score surface of ham in a diamond pattern, without cutting into the meat.

3 tablespoons Dijon mustard
whole cloves
1 cup brown sugar
1/2 cup honey

1 1/2 cups apple juice

Place ham in a roasting pan. Brush it with mustard and place a whole clove in half of the diamonds. Combine sugar and honey and spread over the ham. Pour apple juice into the pan. Bake in a 325° oven for 1 1/2 hours, basting now and again with the juices in the pan, or until a meat thermometer, set in the thickest part (not touching the bone), registers 160°. Serve ham surrounded with Glazed Apple Rings. Serves 12.

 

Glazed Cinnamon Apple Rings

4 large apples, cored and sliced into 3/4-inch rings
1/2 cup apple juice
3 tablespoons cinnamon sugar
pinch of nutmeg and cloves

1/2 cup chopped pecans

Place apple rings in a 9x13-inch baking pan, drizzle with apple juice, sprinkle with cinnamon sugar and spices. Bake in a 350° oven for 20 minutes, sprinkle top with pecans and continue baking for 10 minutes. Serves 8.
