
This delicious stuffing, much like a fluffy
pudding, is a grand accompaniment to roast ham, chicken or turkey.
Dried fruits can be varied...figs, currants, dates can be substituted.
1/2 cup chopped dried apricots
1/2 cup yellow raisins
2 apples, peeled, cored and grated
1/2 cup sugar
2 teaspoons pumpkin pie spice
pinch of ground nutmeg and ground cloves
2 tablespoons butter
1 package (8 ounces) corn bread stuffing
mix
2 eggs, beaten
1 1/2 cups apple juice
1/2 cup chopped pecans
In a skillet, saute together first group of
ingredients until apples are tender and apricots are softened,
about 12 to 15 minutes. Place mixture in a large bowl and stir
in the remaining ingredients until blended. Place pudding in
a 10-inch round porcelain baker and bake at 350° for 30 minutes,
or until top is beginning to crisp. Serves 8.
