A Country Italian Feast on Father's Day

 

Peas with Shallots & Parsley

2 tablespoons butter
3 shallots, finely chopped
1/2 teaspoon sugar
3 tablespoons finely chopped parsley
salt and pepper to taste

2 packages (10 ounces, each) frozen baby peas

In a saucepan, saute together first 6 ingredients until shallots are tender. Add the peas and cook for 2 minutes, or until peas are tender but firm. Serves 6.

Note: - Entire dish can be prepared earlier in the day and refrigerated and reheated before serving.
