
Perhaps one of the easiest and best ways to prepare shrimp is to broil them for a few minutes in a rich garlic and lemon sauce. Serve with a loaf of crusty Italian bread to dip in the delicious sauce.
1 1/2 pounds large shelled shrimp, peeled and deveined
Garlic & Lemon Sauce:
2 tablespoons melted butter
2 tablespoons olive oil
6 cloves garlic, minced
4 shallots, minced
3 tablespoons lemon juice
3 tablespoons minced parsley leaves
salt and freshly ground pepper to taste
In a saucepan, cook together sauce ingredients until onions are transparent, about 3 minutes. Place shrimp in a 10-inch round baking pan and pour sauce over the shrimp, making certain that the shrimp are well coated.
Broil shrimp 6-inches from the heat, a few minutes on each side and only until shrimp turn pink and become opaque. Watch carefully so that the shrimp do not overcook. Serve at once with the sauce spooned over the top. Serves 6 as a first course.
Note: - Sauce ingredients can be prepared earlier in the day. Entire dish can be assembled 30 minutes before broiling. Broil just before serving.
