1/2 pound filo leaves (available at a Middle Eastern grocery)
1 cup finely crumbled feta cheese
1 cup cottage cheese
1/4 cup bread crumbs
melted butter (about 1/2 cup)
grated Parmesan cheese
Cut filo leaves in strips to measure about 14 x 3-inches. Beat together the next 4 ingredients until blended. Working one strip at a time, brush filo leaf with butter. Place 1 teaspoon cheese mixture on one end. Pick up one corner and cover the filling forming a triangle. Fold triangle over and over to the end of the strip. Brush triangle with melted butter. Repeat for remaining strips. Sprinkle tops with grated Parmesan cheese.
Place triangles on a baking pan and bake at 350° for 20 minutes or until golden brown. Serve warm with soup or salad. Yields 36 pastries.
