Greek Honey Nut Cake

3 eggs
3/4 cup sugar

2 cups Ritz cracker crumbs (about 42 crackers)
3/4 cup sugar
1 teaspoon baking powder
1 teaspoon cinnamon
1 teaspoon vanilla
1 orange, grated (remove any large pieces of membrane)
1 1/2 cups chopped walnuts

Beat eggs with 3/4 cup sugar until eggs are very pale, about 5 minutes. Beat in the remaining ingredients until they are blended.

Pour mixture into a lightly buttered 9-inch springform pan and bake at 350° for 30 minutes. Remove cake from oven and pour cooled Honey Cinnamon Syrup over it. Cool cake in pan and serve in wedges. Serves 8.

 

Honey Cinnamon Syrup:
2/3 cup sugar
2/3 cup water
1/3 cup honey
1 slice lemon
1 cinnamon stick

Cook together all the ingredients until mixture is syrupy, about 15 minutes. Remove lemon and cinnamon stick
