
2 eggs
1 cup small curd cottage cheese
2 tablespoons sour cream
1 tablespoon oil
1 teaspoon sugar
1/2 cup grated Parmesan cheese
1/2 cup Bisquick
Beat eggs. Add remaining ingredients and beat together until blended. Grease hors d'oeuvre-size Teflon-lined muffin pans. Fill 1/2 full with batter. Bake in a preheated 350° oven for 25 minutes or until puffed and lightly browned. Yields 24-30 muffins.
Note: -Serve these warm with a dollop of
and a thin slice of smoked salmon. You may enjoy them with cream
cheese
whipped with shrimp or crabmeat which is also very good. They
are delicious
"natural" as well.
