
2 pounds shrimp, shelled and deveined
1/2 cup flour
1/2 cup corn starch
5/6 cup cold water
1 egg
1/8 teaspoon salt
1/8 teaspoon MSG
Lightly dust shrimp with flour. With a rotary beater, mix together the flour, corn starch, water, egg, salt and MSG. Beat until thoroughly smooth.
Dip shrimp in batter and fry in hot oil. When lightly browned on one side, turn and fry the other side. Remove from oil and drain. Keep warm. Serve with Hot Plum Sauce for dipping. Serves 4.
Hot Plum Sauce
1/2 cup plum preserves
2 tablespoons brown sugar
2 tablespoons vinegar
2 tablespoons ketchup
Combine all the ingredients and cook for 5 minutes. Allow to cool a few minutes and serve. Makes about 3/4 cup sauce.
