
2 packages (10 ounces, each) frozen petite sweet peas
1/3 cup chopped green onions
1 tablespoon oil
4 tablespoons seasoned rice vinegar or red wine vinegar
1 jar (2 ounces) slivered pimiento
1 tablespoon grated Parmesan cheese
salt and pepper to taste
Defrost peas and cook in boiling water for 2 minutes and drain. In a bowl, stir together all the ingredients until nicely blended. Cover and refrigerate until serving time. This is delicious served warm or cold. Serves 8.
