Butter Pecan Balls

To avoid breakage, small delicate baked goods are much easier to cool on brown paper, than on a rack. Brown paper is inexpensive and can be purchased in rolls.

1 cup butter (2 sticks)
1/2 cup sugar
2 teaspoons vanilla
2 cups cake flour
1 1/2 cups finely chopped pecans

sifted powdered sugar for dusting

Cream together butter and sugar. Beat in vanilla. Beat in flour until blended. Beat in pecans until blended. Shape dough into 3/4-inch balls and place on a lightly greased cookie sheet. Bake at 350° for about 12 to 14 minutes, or until cookies are set and just beginning to take on color. Do not brown. Allow cookies to cool on brown paper and roll in sifted powdered sugar when cool. Yields about 5 dozen cookies.
