Dried Fruit & Nut Bars

These soft, velvety bars with a cake-like texture and a tart lemon glaze are lovely to serve around the holidays. The Lemon Glaze is very light and syrupy and should be brushed on. Serve them with spiced apple juice or cider.

1 cup margarine
1 cup brown sugar
1 cup sugar
2 teaspoons vanilla

4 eggs

3 1/2 cups flour
2 teaspoons baking powder
2 cups minced fruit bits (chopped mixed dried fruit) or 1 1/2 cups minced dried apricots
1 cup chopped walnuts

Beat together first 4 ingredients until mixture is creamy. Beat in eggs until blended. Mix together flour and baking powder and beat in until blended. Stir in fruits and nuts. Spread batter into a greased 12x16-inch pan and bake at 350° for 20 to 23 minutes, or until top is lightly browned. Allow to cool in pan and cut into bars when cool. Brush with Lemon Glaze after bars are cut. Yields 96 bars 2x1-inch or 48 squares 2x2-inch.

Lemon Glaze:
2 tablespoons lemon juice
1/2 cup sifted powdered sugar

Stir together lemon juice and sugar until blended. Mixture will not be a drizzling consistency. Brush onto cut bars and allow to set for about 1 hour before serving.
