
I love oatmeal cookies that are chewy, chunky and filled with all manners of good things. This marvelous bar cookie is one of my favorites. It is truly delicious, and I hope you enjoy it as much as I do.
1 1/4 cups sugar
1/2 cup butter, softened
2 eggs
1/2 cup honey
1 teaspoon vanilla
1 3/4 cup flour
2 cups quick-cooking oats
1 teaspoon baking soda
pinch of salt
1 cup butterscotch chips
1 cup chopped pecans
1/2 cup raisins
Beat together first 5 ingredients until blended. Beat in the next 4 ingredients until blended. Stir in the remaining ingredients.
Spread batter evenly into a greased 10x15x1-inch jelly roll pan and bake in a 350° oven for 25 minutes or until top is browned and a cake tester, inserted in center, comes out clean. Allow to cool in pan and then cut into squares to serve. Yields 5 dozen 1 1/2-inch squares.
Note: -Make certain that your jelly roll pan is at least 1-inch
deep or batter will overflow while baking. Some jelly roll pans
are 1/2 or 3/4-inch deep and are not deep enough for this recipe.
-Decorate with a faint sprinkling of sifted powdered sugar.
