New Orleans Sampler at Mardi Gras
Cajun Honey Corn Muffins with Currants
1 cup yellow cornmeal
1 cup milk
1/4 cup sour cream
1 egg
1/4 cup honey
1/3 cup butter, melted
1/3 cup sugar
1 1/4 cups flour
1 tablespoon baking powder
1 cup dried currants
Beat together first 7 ingredients until blended. Stir
together next 3 ingredients and add, all at once, stirring until
blended. Do not overmix. Divide batter between 12 paper-lined
cups and bake in a 400° oven for 22 minutes, or until a cake
tester, inserted in center, comes out clean. Allow to cool for
10 minutes, and then remove from pan and continue cooling on a
rack. Yields 12 muffins.
