
What a nice dish to serve for a casual dinner. Shaping the veal into a ring adds a touch of glamour. Fill the center with Cinnamon Rice or buttered vegetables.
1 1/2 pounds ground veal
1/2 pound ground pork
1 medium onion, grated or very finely chopped in food processor
1/4 pound mushrooms, thinly sliced. Place in a kitchen towel
and squeeze out some of the liquid.
3 slices fresh egg bread, moistened in water and squeezed dry
1 carrot, peeled and finely grated
1 cup sour cream
salt and pepper to taste
Combine all the ingredients in a large bowl and mix until blended. Butter and flour a 10-inch ring mold and place meat evenly in mold. Place on a cookie sheet and bake in a 350° oven for about 1 hour or until meat is cooked through. Ease the sides of the mold with a knife and invert onto serving platter. Fill center with rice or vegetables. Serves 8.
Note: -Veal ring can be prepared earlier in the day and reheated at time of serving.
1 1/2 cups rice
3 cups chicken broth
1/4 cup butter (1/2 stick)
1/8 teaspoon cinnamon
salt to taste
1/2 cup chopped toasted almonds
1/2 cup yellow raisins, plumped in boiling water and drained
In a saucepan, place rice, broth, butter and seasonings and
simmer mixture, covered, for about 30 minutes or until rice is
tender and liquid is absorbed. Can be held at this point. Before
serving, heat rice and stir in the almonds and raisins. Serves
8.
