
Wild rice, faintly sweetened with apple and sparkled with chives is a nice accompaniment to beef. This can be prepared earlier in the day and heated before serving.
1 cup wild rice
1 cup long-grain brown rice
4 cups chicken broth
2 tablespoons butter or margarine
salt and pepper to taste
1 apple, peeled, cored and grated
1 tablespoon butter
3 tablespoons chopped chives
In a covered saucepan, place first group of ingredients, and
simmer mixture for about 40 to 45 minutes, or until rice is tender.
In a skillet, saute apple in butter until apple is tender. When
rice is cooked, fluff it up with a fork and stir in the apple
and chives. Serves 12.
