No-Knead Flatbread with Onions & Cheese

This is a very popular bread in many Italian restaurants. It is a Focaccia which can be made with any number of flavors. It is very simple to prepare at home, for a few ingredients are simply beaten together and then the rising takes place at room temperature while you are free to do other things. There are many alternatives to onions and cheese. Rosemary and garlic, olives, raisins are all good.

5 1/2 cups flour
1 teaspoon salt

2 cups warm water (110°)
1 package active dry yeast

1/4 cup olive oil

1 cup chopped green onions
1/2 cup grated Parmesan cheese

In the large bowl of an electric mixer, mix flour and salt. In a glass measuring cup, soften yeast in warm water. Beat yeast mixture into the flour until blended. Beat in the olive oil. Continue beating for 5 minutes. Drizzle a little oil over the dough, cover the bowl and allow to rise at room temperature for 1 hour. Punch dough down and beat in the onions and cheese.

Spread dough evenly into a 10x15x1-inch oiled baking pan, cover with a towel and allow to rise at room temperature for 1 1/2 hours. Place pan on a baking sheet (to prevent bottom from overbrowning) and bake at 400° for 30 to 35 minutes, or until top is golden brown. Cut into squares to serve. Or let everyone pull off a piece or two. Yields 15 3-inch squares.
