
This is an incredibly easy and very delicious cookie that is chewy AND crunchy. It assembles in seconds and bakes in minutes.
3 cups coconut meal (from the health food stores)
1 teaspoon vanilla
1 can (14 ounces) sweetened condensed milk
1 cup semi-sweet mini-chocolate chips
Combine all the ingredients and stir until they are blended. Drop batter by the tablespoonful on a parchment-lined cookie sheet. Bake at 350° for 12 minutes or until lightly browned. Remove cookies from pan and allow to cool on the parchment paper. Yields about 36 to 48 cookies.
A variation of the above, but very different in taste and texture.
3 cups almond meal (from the health food stores)
1 teaspoon vanilla
1/2 teaspoon almond extract
1 can (14 ounces) sweetened condensed milk
1/2 cup raisins
Combine all the ingredients and stir until they are blended. Drop batter by the tablespoonful on a parchment-lined cookie sheet. Bake at 350° for 12 minutes or until lightly browned. Remove cookies from pan and allow to cool on the parchment paper. Yields about 36 to 48 cookies.

1/2 cup coarsely chopped walnuts
Combine all the ingredients and stir until they are blended.

cookies from pan and allow to cool on the parchment paper. Yields
about 36 to 48 cookies.
