
This is one of the easiest and best cakes that you can prepare. It is a moist and tender chocolate cake. Don't be misled by its simplicity. It is a fine torte, takes minutes to assemble, can be made ahead and, not the least of its virtues, it freezes beautifully.
5 eggs
1 cup sugar
1 1/4 cups walnuts or pecans
1 teaspoon vanilla
2 tablespoons flour
1 teaspoon baking powder
3 tablespoons cocoa
Place eggs in bowl of a food processor and whip for a few seconds. Add the remaining ingredients and blend at high speed for 1 minute, or until nuts are finely ground.
Pour batter into a lightly greased and floured 10-inch springform pan. Bake at 350° for about 20 minutes, or until a cake tester, inserted in center, comes out clean. Spread top smoothly with Chocolate Glaze. Serves 12.
Chocolate Glaze:
2/3 cup semi-sweet chocolate chips
1/3 cup butter
1 teaspoon vanilla
In the top of a double boiler, over simmering water, melt chocolate with butter. Stir in the vanilla.
