
I like to add the vinaigrette just before serving, as the cucumbers have a tendency to render a great deal of liquid which dilutes the dressing. Drain the cucumbers before serving and add dressing to taste.
Vinaigrette Dressing:
1 cup white vinegar
1 cup water
3/4 cup sugar
Cucumber Salad:
6 large cucumbers, sliced very thin
1/2 cup chopped chives
2 teaspoons dried dill weed
salt to taste
In a glass jar with a tight-fitting lid, stir together vinegar, water and sugar until sugar is dissolved. In a large bowl, add the salad ingredients. Before serving, drain any liquid that has formed and add Vinaigrette to taste. Serves 12.
