
Your guests will love this flavorful kasha. It is a perfect accompaniment to the Chicken Stroganov. I recommend that you prepare an extra amount as I have found that most people tend to have seconds.
1 cup kasha (also known as cracked-wheat bulgur)
1 tablespoon oil
1 1/4 cups chicken broth
3/4 cup water
salt and pepper to taste
1 large onion, chopped
1/4 pound mushrooms, sliced
1/4 cup grated carrots (optional)
2 tablespoons oil
In a saucepan, cook cracked wheat in oil, stirring now and again, for 2 minutes. Carefully, (it could splatter), stir in the broth, water and seasonings. Cover pan, lower heat, and simmer mixture for about 15 minutes, or until liquid is absorbed.
Meanwhile in another covered saucepan, sauté together next 4 ingredients until onion is soft and mushrooms are tender. Uncover pan and cook for another few minutes or until juices have evaporated. Toss mushroom mixture into cracked wheat and heat through. Serve with a little chopped parsley on top. Serves 6. Double the recipe to serve 12.
