Russian Flatbread with Onions & Poppy Seeds

This is a gorgeous large round flatbread that is fun to serve. It can be assembled in literally minutes. It can be prepared 1 day earlier and heated before serving.

3 large onions, chopped
3 tablespoons oil

3 cups self-rising flour
3 tablespoons sugar
1 can (12 ounces) beer

2 tablespoons poppy seeds
2 tablespoons oil

In a large skillet, sauté onions in oil until onions are browned. In the large bowl of an electric mixer, beat together flour, sugar and beer until blended (about 30 seconds). Do not overbeat. Beat in the onions and poppy seeds.

Place 1 tablespoon oil on the bottom of a 12-inch round baking pan. Spread batter evenly in pan and drizzle remaining oil on top. Bake at 350° for 45 minutes, or until top is golden brown. Cut into wedges to serve. Serves 12.
