

Raspberry & Coconut Meringue Cookies Umm... Absolutely delicious!
3/4 cup butter
1 1/2 cups flour
1/2 cup sifted powdered sugar
2 egg yolks
1 tablespoon grated lemon peel
1 1/4 cups raspberry jam
1 cup chopped walnuts
2 egg whites
1/2 cup sugar
1/2 cup coconut flakesIn the large bowl of an electric mixer, beat together butter, flour, sugar, yolks and lemon peel until mixture is blended. Pat mixture into a buttered 9x13-inch pan. Bake in a 350x oven for 15 minutes. Spread raspberry jam over warm crust and sprinkle with chopped walnuts.
Beat whites with sugar until stiff. Beat in coconut flakes. Spread mixture evenly over jam and nuts. Return to oven and continue baking for about 20 minutes or until meringue is golden brown. Cool and cut into bars. Yields about 48 cookies.
Note:- These cookies are equally delicious made with apricot jam. Use a nice fruity jam and sieve it.
