The New Fast & Fancy Favorites - Leaner, Ligher & More Luscious Sample Recipe: Coulibiac of Dilled Chicken & Mushrooms This heavenly first course is rather simple to prepare when using the prepared puff pastry. Puff pastry can be cut into rounds or triangles. After baking, the puff is cut in half, and the succulent chicken mixture is sandwiched in between. Some of the chicken and sauce can cascade around the pastry and the plate can be sprinkled with a little dill This is a small portion. Puff pastry portions can be made larger by stacking 3 patty shells which will yield 8 triangles.
2 tablespoons butter
1 small onion, minced
1/4 cup minced shallots
3 cloves garlic, minced
1/2 pound mushrooms (sliced and tossed with 1 tablespoon lemon juice)
1/3 cup dry white wine
3 teaspoons flour
1/2 pound chicken breast (sauteed quickly in 2 teaspoons of butter, and cut into 1/4-inch pieces)
1/2 cup sour cream or Creme Fraiche
1/2 teaspoon dried dill weed
salt to tasteIn a large skillet, saute together first 4 ingredients until onions are transparent and not browned. Add the mushrooms with the lemon juice and saute until all the liquid rendered is evaporated. Add the wine and cook until wine has evaporated. Add the flour and cook and stir for 2 minutes. Stir in the cooked chicken, sour cream, dill and salt and cook for 1 minute, stirring.
Cut a triangle of puff pastry in half, crosswise. Spoon some of the chicken on the bottom half and top it with the remaining half. Garnish plate lavishly with sprays of dill and lemon slices sprinkled with parsley. Fills 6 pastry triangles. Double the recipe to serve 12.
To Prepare Triangles of Puff Pastry:
1 package puff pastry patty shells (6)
1 beaten egg
12 sprinkles grated Parmesan cheeseStack 2 patty shells and roll out to measure a 5-inch circle. Cut circle into 4 wedges. Repeat with remaining patty shells. You will have 12 triangles. Brush tops lightly with beaten egg and sprinkle generously with grated Parmesan cheese. Bake at 350-degrees for 20 to 25 minutes or until puffed and golden. Yields 12. If you are only serving 6, remaining triangles can be frozen and served at another time with soup or salad.
To make Creme Fraiche:
Stir together 1/4 cup cream and 1/4 cup sour cream until blended. Allow to stand at room temperature for about 1 hour.
