Apricot Chutney with Banana & Orange

1 package (6 ounces) dried apricots
1/2 cup sugar

1 1/2 cups orange juice
1 cup sugar
1/3 cup cider vinegar
2 ripe bananas, coarsely chopped
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
1/4 teaspoon salt

In the bowl of a food processor, chop apricots with 1/2 cup sugar until apricots are coarsely chopped. Place mixture in a saucepan and stir in the remaining ingredients. Simmer, over low heat, for about 30 minutes, or until mixture thickens. If you use a candy thermometer, it should read 230°. Allow to cool, place chutney in a glass jar with a tight-fitting lid, and store in the refrigerator. Yields about 2 cups.
